With both London and Dubai Restaurants due to open in 2021, the team looks to create a new leader within the fun dining industry, competing with the biggest names already established in the market such as Zuma or Bagatelle.
YUCA will be serving traditional Mexican dishes uplifted by Romain's family secrets with a Japanese twist and all in a genuine revisited Mexican Hacienda. An unexpected fusion delicately balanced by their chef. YUCA is the result of genuine passion, family, and ambition. Romain Fargette, Founder of YUCA started running his first club at only 18 years old following the family business and decided to go one step further. When he delved deeper and began to study his Mexican roots from his mother. The 'lightbulb moment' was the day his mother presented to him a recipe book handwritten decades ago by his grandmother herself.
Romain realized just how much potential this traditional and somewhat artisanal cuisine has twisted with the innovation of the Japanese fusion cuisine: something totally unique in the restaurant business.
Together with Wicky Priyan, a famous and innovative Japanese chef, over many mezcal and tasting sessions not just a menu was born, but a totally immersive journey into Romain's vision. A whole experience, teamed with a vibrant tropezienne atmosphere, very close to its roots.
